Sajian Istimewa at Lemon Garden, Shangri-La Kuala Lumpur from 28 February to 31 March 2025 featuring authentic Malay dishes, alongside a luxurious selection of hampers and festive treats from Lemon Garden 2Go. This year, the outdoor area is transformed into a lively warong-style bazaar, reminiscent of traditional Ramadan markets, where guests can explore an array of live cooking stations serving authentic local delicacies.

The chefs at Shangri-La Kuala Lumpur have meticulously curated a selection of time-honoured dishes, each crafted with passion and a deep connection to their origins. Inspired by the flavours of their hometowns, these culinary creations capture the essence of tradition, ensuring an authentic and memorable dining experience.

• Chef Muhammad Safri’s Kambing Bakar ‘Meletup’ brings the culinary traditions of Selangor to life. He mastered the art of Malay-style marination, a technique passed down through generations. His cooking is deeply rooted in the bold and aromatic flavours of his hometown, where spices are carefully selected to create depth and character in every dish. The succulent lamb is marinated with a blend of aromatic spices and grilled to perfection. The name ‘Meletup’ speaks to the explosion of bold flavours that emerge from the 24-hour marination process, creating a memorable, satisfying dish served with biryani rice and a fragrant turmeric-coconut gravy.

• Chef Nahar’s Rendang Tok Daging Tulang Rusuk, brings with him a royal dish from Perak, highlights slow-cooked beef short ribs that absorb the rich flavours of toasted coconut, spices, and coconut milk. 

• Chef Hafiz’s Ikan Patin Masak Tempoyak hails from Pahang, this dish stars ikan patin (silver catfish), a prized fish found in the rivers of Pahang, known for its tender, delicate texture. A dish that celebrates the distinct flavours of Pahang, passed down through generations. 

The fish is cooked in tempoyak, a fermented durian paste that gives the dish its signature bold and aromatic flavour. The rich, tangy notes of the tempoyak combine harmoniously with the spices and coconut milk, creating a perfect balance of savoury and slightly sweet elements.

• Chef Rasyafiq’s Laksa Johor brings a Southern Malaysian twist to the traditional laksa. Unlike other versions, this dish uses spaghetti instead of rice noodles, a feature influenced by Johor’s royal kitchens. The rich, fish-based gravy made from mackerel, coconut milk, and spices is slow-cooked to develop a deep, savoury flavour, making it a truly unique and historical dish. For Chef Rasyafiq, it is more than just a dish—it is a true taste of home, a reflection of heritage, culture, and the love for bold flavours. With every bowl, he shares the essence of Johorean tradition, crafted with passion and dedication.

• Chef Fazriza’s Kuih Bakar Dangai dengan Gula Melaka offers a sweet and nostalgic dessert from Penang. This beloved treat, made from glutinous rice flour, coconut, and Gula Melaka (palm sugar), delivers a chewy, melt-in-your-mouth texture. 

Slow-cooked to perfection, the Kuih Bakar Dangai boasts a slightly crispy exterior with a soft, chewy interior. It is then topped with Gula Melaka, a fragrant palm sugar, which adds a rich, caramel sweetness that makes each bite memorable. 

In addition to these signature dishes, guests can enjoy a variety of beloved local specialities, including Bubur Lambuk, a comforting rice porridge infused with fragrant spices and slow-cooked to perfection. A staple during the fasting month, it is traditionally prepared and shared within the community as a symbol of generosity and togetherness.

Other festive must-haves include Ketupat, Lemang with a variety of Serunding (spiced meat floss) and classic desserts such as Ice Kacang, Chendol, and Pengat Pisang, ensuring a complete and satisfying dining experience.
