Chocolate Brownies

This recipe takes 45 minutes to make, serves 12 people and is super easy.

Ingredients

1 Teaspoon of Baking Powder

100g of Butter

30g of Cocoa

200g of Dark Chocolate

4 Eggs

250g of Golden Caster Sugar

100g of Plain Flour

Method

Heat your oven to 180C/fan or 160c/gas 4.

Using a 22cm square tin, lay down baking parchment over the container.

Chop up the Butter and Dark Chocolate.

Put the pieces in a bowl and microwave them until liquified.

Whisk the Eggs and Golden Caster Sugar together until the mixture is light and fluffy.

Pour the liquid Chocolate mixture into the fluffy Egg mixture. Carefully mix by gently folding, keeping as much of the fluffy texture as possible.

Sift in the Plain Flour, Cocoa and Baking Powder, and gently fold these ingredients in too.

The texture should now be fudgy.

Gently lay the combined mixture into the prepared square tin, and put it in the oven for 25 to 30 minutes.

Allow to cool, and serve!

Sprinkle on the Sea Salt Flakes.

Strawberry Custard Creams

This recipe only takes 50 minutes to bake and makes around 24 biscuits.

Ingredients For The Biscuits

125g of Custard Powder

115g of Golden Caster Sugar

340g of Plain Flour

225g of Unsalted Butter

2 Tablespoons of Whole Milk

2 Teaspoons of Vanilla Extract

Ingredients For The Filling

2 Tablespoons of Custard Powder

20g of Freeze-Dried Strawberries

300g of Icing Sugar

4 Tablespoons of Smooth Strawberry Jam

150g of Unsalted Butter

2 Tablespoons of Vanilla Extract

Method

Heat the oven to 150C/fan or 150C/gas 3.

Soften the 225g of Unsalted Butter and mix it with the 115g of Golden Caster Sugar until pale and fluffy. You may need to use an electric mixer.

Add the remaining ingredients from the biscuit list to create a soft dough.

Put the dough on a sheet of baking paper and roll it out until there is an even thickness of 5mm.

Refrigerate for 30 minutes or until firm.

While the biscuits mixture is resting, put all of the filling ingredients (except the Smooth Strawberry Jam) into a bowl and mix until pale and fluffy.

Cover the filling until ready.

Once the biscuits dough is firm, lightly flour your cookie cutter and cut out as many shapes as you can.

Put your cut-out biscuits on a baking tray, leaving a 2cm gap between them.

Bake for 10 to 15 minutes.

Once cooked, wait to cool.

Once cooled, spread the filling mixture along a biscuit, put in some jam, and lay another biscuit on top.
