Firewood Chicken Dhum Briyani |
Firewood Chicken Dhum Briyani
This is Passage Thru
India MUST TRY dish, I personally love the combination of exquisite chicken
briyani prepared with kachchi mos (raw meat), marinated with spices overnight
then soaked in dahi (curd), which is then sandwiched between layers of fragrant
basmati rice, exotic Indian spices, Egyptian saffron, Persian cashews, and
almonds.
It is slowly cooked in sealed handi (vessel) with dough, and firewood placed above and below "in dhum" to enhance its flavours. This is a challenging process as it requires meticulous attention to time and temperature to avoid over or under-cooking the meat. The briyani rice is flavourful and aromatic with tender juicy chicken.
Mutton Perattal |
Mutton Perattal
If you love mutton as much as me, this mutton peratal is perfect for you and your family. Perattal, which means dry curry with luscious thick gravy in Tamil, is popular in Indian cooking. It is slow-cooked to allow the flavors to develop into a full-bodied wallop of savory piquancy.
Paneer Makhini |
Paneer Makhini
Specially made paneer
cubes or cottage cheese that is soft and mellow, cooked in spicy rich Mughlai
gravy of tomato, cashew nuts, milk cream along with butter that makes it
irresistibly delicious. An ultimate Punjabi Love Affair. The gravy is not too
spicy and goes well with the tandoor bread.
Plain Tandoor Parottha |
Plain Tandoor
Parottha
Whole Punjabi whole
wheat flatbread roasted in an charcoal flamed clay oven.
Papadums |
Mint Chutney &
Papadums
Mint Chutney is a
delicious tangy condiment prepared from fresh mint leaves, coriander leaves,
ginger, and garlic, accompanied by some Papadum. I love Papadum it’s so crispy
and I can’t stop munching.
Raitha |
Raitha
Diced cucumber,
onion, chilly and carrot soaked in spiced yogurt, this refreshing condiment is
an excellent accompaniment to the Dhum Briyani.
Ladoo |
Ladoo

Sweets, this is a MUST HAVE in any Indian festive or religious season. Packed
