with you two of my recipes ~ Stir-Fry Sesame Soy Chicken with Yukiguni Maitake
and Roasted Sesame Salad with Grilled Yukiguni Maitake. As working urbanites
and healthy lifestyle advocate with busy schedule; I try to balance my family
life and diet as much as I can, because I believe in “we are what we eat”.

I don’t have the luxury of time to be in the kitchen for long, therefore I
usually cook and prepare simple healthy meals as often be it at home or in the
office.

Recently, I’m into
this Yukiguni Maitake mushroom where I usually bought it from AEON Supermarket.
Not only it tastes so good when added into my dishes but also loaded with
nutrients, vitamins and fibers. It contains vitamin D that enhances immune
system, muscles, bones; antioxidants properties, and contains 2.7g of dietary
fiber in 100g which is about the same amount as one lettuce.

What I really love
about Yukiguni Maitake is the taste and texture. Not only it enhances the taste
of every dishes but it’s crispy and volume texture delivers satisfaction and
pleasing to chew, that keep me from eating without guilt. When added Yukguni
Maitake into sesame soy chicken it enhances the whole taste and makes the dishes
goes so well with rice.

Cooking Tips 1: Do you know that most edible mushroom contains guanylic acid. This is an ingredient that draws out the umami in food. When I added Yukiguni Maitake into my dishes, it helps to enhance or deepen the taste and make my dishes more flavorful. Umami is one of the five basic tastes together with sweetness, sourness, bitterness, and saltiness.

Recipe: Stir-Fry Sesame Soy Chicken with Yakiguni Maitake
Ingredients:
2 pcs Yukiguni Maitake Mushroom
300g Chicken breast
Yellow & Green capsicum
Cherry tomatoes
Onions & Garlic

Seasoning:
2 tablespoon of
sesame oil
2 tablespoon of light
soy sauce
1 teaspoon of dark
soy sauce
Pinch of salt and
pepper
Directions Stir-Fry Sesame Soy Chicken with Yakiguni Maitake |
Directions:
1. Tear the Yukiguni
Maitake into bite-sized pieces. Sliced the chicken breast meat into bite-sized
pieces, and sprinkle some salt and pepper onto the meat. Cut the yellow &
green capsicum, cherry tomatoes, onions, and garlic.
2. Add oil, garlic, and onion into the heated pan & fry. Then add the sliced chicken breast and
Yukiguni Maitake, pour the sesame oil & soy sauce and fry.
3. Lastly, add the
yellow & green capsicum and cherry tomatoes and stir-fry for a while, the dish is done.

Recipe: Roasted
Sesame Salad with Grilled Maitake
Ingredients:
1 pc of Yukiguni
Maitake Mushroom
Fresh garden salad
Yellow capsicum,
Japanese cucumber, cherry tomatoes, and onions
Seasoning:
Roasted Sesame Sauce
(on the side)
Pinch of salt and
pepper
Grilled Yukiguni Maitake |
Directions:
1. Tear the Yukiguni
Maitake into bite-sized pieces and sprinkle some salt and pepper. Grilled the
mushroom in the oven for about 10 minutes.
2. Add the Grilled
Yukiguni Maitake onto the bed of fresh salad and I prefer my roasted sesame
sauce to be served at the side instead of pour on the salad.
