Finally
here is my Healthy Nasi Lemak Twist with
U.S. Potato. For 2017 U.S. Potato Goodness Fiesta I decided to create a
healthy version of our national favourite food, nasi lemak without compromising
the taste. As you know nasi lemak is quite high in calories and fat, so I used
U.S Russets, Red & Purple Potatoes to replace the rice instead and all the
ingredients used are fresh and nutritious.

you might think that potatoes is fattening because its carbohydrate, this is a
misconception. Do you know that, potatoes can be part of weight management
regimen because potatoes are one of the most filling food and staved off hungers
better than other common sides. Fresh potatoes cook in healthy way contain
less calories than other types of carbs.

Therefore,
I am going to share with you my Healthy Nasi Lemak Twist with U.S. Potato recipe.
As you know, we Malaysian love to eat nasi lemak be it for breakfast or anytime
of the day. Nasi lemak can be quite high in calories and fat so I decided to create
a dish that everyone can enjoy with less guilt.
I used
U.S Russets, Red & Purple Potatoes to replace the rice instead and all the fresh
and nutritious ingredients. The U.S. Potato contains zero fat, cholesterol and
low in calories. One medium-sized potato, contains zero fat and cholesterol for
a satisfying 110 calories. Eaten with the skin, the potato is an excellent
source of vitamin C and a good source of potassium and vitamin B6 too.

Ingredients:
U.S.
Potato Russet, Red, and Purple / Blue Potatoes
Sambal
Nasi Lemak
Fried
Anchovies
Yoghurt
Cucumber
Tomatoes
Peanuts
Parsley
Preparation Methods:
Raw U.S. Potato Russets, Red, and Purple / Blue in cubes |
1. Cut
the U.S. Potato Russets, Red, and Purple / Blue in cubes and mixed it with a
pinch of salt, add the yoghurt (substitute coconut milk) and transfer all to
the Red U.S. Potato jacket.

2. Heat
oven to 200C, apply a little olive oil over each potato and put on the top
shelf of the oven. Bake for 20 minutes, then turn down the oven to 180C and
bake for 30 minutes until the skin turn brown and the flesh soft.
3. Add
the nasi lemak condiments such as fried anchovies, peanuts and sambal. Put it
back to the oven to bake for another 3 minutes.
4.
Transfer to the plate, add hard boil egg, cucumber and tomatoes, add a bit more
sambal and garnish with a bit of parsley on the top.

5. The
healthier version of nasi lemak is ready to be served, with assorted colors of
U.S. Potatoes. One medium-sized potato, contains zero fat and cholesterol for a
satisfying 110 calories. Eaten with the skin, the potato is an excellent source
of vitamin C and a good source of potassium and vitamin B6 too.
