Chef
Toni Valero, from Barcelona, Spain, co-founder of Coquo Restaurant and Wine Bar
has been in Malaysia for four years. Initially, Chef Toni shared his country’s
delicacies at Ohla Tapas and Cocktails at The Intermark. The chef’s past
culinary expertise include Spain’s El Celler de Can Roca and Mugaritz, both on
the Top 10 list of The World’s 50 Best Restaurant 2017.

Last
year, Chef Toni ventured into new cuisine territory together with
food-aficionado Tricia Kandiah to bring modern cuisine to the Malaysian public
with Coquo Restaurant and Wine Bar, at Solaris Dutamas.

In
conjunction with Mother’s Day on 14 May 2017, the restaurant presents a special
home cooked, culturally rich menu with two dishes Chef Toni learnt from his mom
- Gazpacho with Grilled Lobster and Cured Egg Yolk and Pork Rib & Crab
Rice. Coquo Restaurant and Wine Bar’s special Mother’s Day menu is available
from 12th to 14th May, 2017.

Gazpacho
with Grilled Lobster and Cured Egg Yolk is refreshing and light soup made of raw vegetables, mainly tomatoes, and the dish is served cold together
with grilled fresh local lobster and cured kampung egg yolk. This dish
originates from Andalusia, South of Spain.

The
aromatic and flavourful dish of Pork Rib and Crab Rice, it’s a dish with rice
and sofrito, a combination of chopped vegetables like garlic, onion, capsicum
and tomatoes which are cooked over 2 days and prawn stock. Topped with the juicy
and tender iberico pork ribs and local crabs, the dish combines flavours from land
and sea. When mixed all the ingredients together it tastes addictive.

Fresh
and thinly sliced Prawn Carpaccio served on prawn rice cracker and topped with
sarawak laksa caviar and laksa spicy oil to give a hint of spice. The dish inspired
by Chef’s favourite Sarawak Laksa.

The
aromatic, creamy and smooth curry leaves ice cream on lightly sweeten strawberry
Szechuan pepper and jasmine green tea gelatin. A gastronomical and memorable dessert
to seal the meal, the soothing and satisfying ice cream with lightly sweeten
strawberry and the hint of peppery that lingers on throat.

Overall
we had a satisfying gastronomical dining experience at Coquo. All the dishes is
specially curated by Chef Toni Valero using fresh local produce and inspired by
local and international cultures. Definitely worth the visit if you love fine
food in a casual dining ambience. I am impressed with their open kitchen plus its
cozy and russet ambience with pure wooden and leather fittings.

bar cellar carries a good selection of international wines from various countries,
curated to pair well with the modern cuisine they serve.
