Tarragon de paris butter roast chicken stuffed with smoked turkey, Tasmanian double brie served cranberry sauce (whole bird). The cranberry sauce compliment the roast chicken and eat together with the smoked turkey makes it better.

Baked salmon with maple syrup and lemon thyme. I like the way the baked the salmon, it just right and juicy not overcooked or flaky. The sauce and marinate is not too heavy and does take away the salmon’s fishy smell. I love it together with the brussel sprouts and baby carrots.
3 style mash potatoes
Serves with assorted condiments such as rosemary salt new
potatoes, buttered brussel sprouts, honey glazed roasted vegetables, 3 style
mash potatoes and fresh cucumber salad. Plus mint sauce, horseradish cream sauce and chicken
jus with roasted garlic dressings.

The Desserts are Christmas Teast is the cake o the day. That
day we were served two types of cakes; the Pistachio Gateau with Mousseline
Cream and Mixed Berries Cake and Christmas Butter Cake with Passion Fruit
Mousse Toasted Coconut Flakes. I actually don’t mind a second helping of the Pistachio
Gateau with Mousseline Cream and Mixed Berries cake. Its one of the best, so
creamy, moist and full off pistachio flavours.
