Roast Stuffed Chicken with Sundried Tomato Pesto & Root Vegetables using Panasonic Cubie Oven and Le Creuset Casserole Dish |
Method
1. Preheat Panasonic Cubie Oven to 220 °C.
2. To make the sundried tomatoes pesto: blend all the ingredients together in food processor, set aside.
3. To prepare the vegetable base: toss together all the ingredients. Arrange the vegetables in the Le Creuset casserole dish.
4. Pat dry chicken and spread the pesto over it. Arrange the carrots, asparagus and mushrooms on the pesto spread. Roll up the chicken and tie with a cooking string. Season the skin with salt, pepper, paprika and oil.
5. Place the stuffed chicken onto the vegetables and bake in the preheated Cubie Oven for 15 minutes. Glaze the chicken with the excess oil from the vegetables and continue to bake for another 5 to 8 minutes or until golden brown.
